In my opinion, the key to making great Pad Thai is to prep all your ingredients and lay them out nicely before beginning to cook, a.k.a. mis en place. Pad Thai is a quick stir-fry so you don’t want to measure out ingredients while you’re cooking. Another challenge for us was to find the perfect Thai ingredients, particularly tracking down the right tamarind concentrate. Most were either too sweet, too salty or not flavorful enough. We found one with 85% tamarind and only 15% water, nothing else in there. So try to find a similar concentration of tamarind without any extra additives. We dropped in for lunch and it was a delicious surprise with excellent food. The Tom Yom soup is delicious. The spice was perfect for level 2. Their pad Thai was excellent. The chicken satay was well done and I could taste that the peanut sauce is homemade. They have a unique dish Malay vegetable. You may not find it in other Thai places. Loved the taste. They seemed busy with crowd so the wait was little longer than expected. But for a small mom and pop shop, that is understandable with a big party there. Enjoy your food there.

The lengthy menu is full of absolute hits from all over the country: succulent frog’s legs, fried golden and draped in holy basil; salty minced pork, hiding rich quarters of black (preserved) eggs; a tantalizing tamarind-infused sour curry, bobbing with shrimp and fluffy cubes of omelette. Add the tofu and toss until lightly coated with oil. Add the eggs and scramble.
