We appreciate a restaurant that calls it like it is, and at Spicy BBQ, expect to get Thai-style BBQ and expect to get it real spicy. But this six-table strip mall spot at Normandie and Santa Monica has much more than just a few excellent plates of BBQ pork. The spicy jackfruit salad, the pork patties, the chili dips, and a khao soi we think about late at night when the lights go out make this colorful, tiny spot great.
But for as many sugarcoated Thai restaurants operating in the U.S., there’s an appreciable number of spots doing it right—especially in immigrant-heavy cities like Houston, where Asia Market encourages diners to personally adjust their dishes with condiments like pickled peppers, fish sauce, and chili sauce (nam prik). L.A., meanwhile, supports both NIGHT + MARKET, which puts a hipster spin on Thai street food, and Thai Town’s Jitlada, where chef Tui Sungkamee makes traditional fiery southern dishes.
Dave Tewasart and Justin Baey are going strong at Grand Central Market’s Thai stall, where classic streetside fare like grilled chicken (gai yang) gets cooked sous-vide before being finished on the grill. On the other side of the stand, Sticky Rice Too is Tewasart’s answer to all the requests for noodles. The broth on the khao soi is bold, rich and slightly sweet comfort food that’s a gutsy take on the dish. The pad thai might be some of the best in the city. Lately, we’ve been telling a lot of people to get Uncle Boons in their rotation. It’s in a little space on Spring Street, and it’s the rare spot that exceeds the expectations of its trendy hype. Get the massaman curry with boneless beef ribs and the golden curry with a chicken leg. Also, try something from the charcoal grill (there’s a whole menu). The food packs serious depth and flavor, and it’s a guaranteed spot to impress out-of-town friends. And If you want to finish strong, don’t sleep on the coconut sundae. The name means "drunken noodle." It's a dish Thai street vendors sell to tipsy party-goers, and it's also Leah Cohen of NYC's Pig and Khao's pick for a satisfying late night meal. Like Laad Naa, this dish is made with wide rice noodles. "They're similar to Chow Fun noodles," explains Cohen: "Spicy, sweet, and salty, with Chinese broccoli, eggs, onion, meat, chiles, garlic, soy, fish sauce… a little oyster sauce." In other words: A little bit of everything. P.F. Chang’s Chicken Pad Thai is a recent recipe addition to the menu. I ran a few tests based on a corporate training video that was posted online which gives away the basic recipe and cooking methods, but with all the ketchup it was too inauthentic for my tastes. If you would like me to make a copycat of the recipe I’d be happy to give it a try, but I’m pretty confident if you all love authentic pad thai, you will love this recipe. So is Nahm the best Thai restaurant in the world? I have no way of knowing for sure. Is it the best Thai restaurant I have ever eaten at? Absolutely. And while there are lots of great restaurants in London, most have direct equivalents in New York and other major cities, while Nahm is so unique compared to anything here in the States that I consider it a must anytime I head across the pond. After heading east to eat their way through Bangkok and Chiang Mai in 2012, they returned to D.C., where Doi Moi (meaning “new change”) was born. The 5,000-square-foot restaurant overlooks bustling 14th Street and features a large open kitchen paying tribute to the culinary traditions found throughout Southeast Asia—and its Thai dishes are among D.C.’s finest. LA has a number of vegan Thai restaurants, and for the most part, they’re terrible. Save for Araya’s Place. The Beverly Grove strip mall joint started in Seattle, and has been around for almost 30 years. And while we’ll always prefer our curry with meat, we’d be lying if we said we didn’t think about their avocado curry more than we probably should. The green curry itself is outstanding, but the avocado mixes so well with it, you wonder why more people don’t serve it. If you’re a vegan, you can’t get much better than this place. If you’re only familiar with pad Thai and massaman curry, great. Ayada does excellent versions of both (and you should try them with duck). Ayada is a reliable, straightforward option if you want Elmhurst-quality Thai, and, if you want something more adventurous, you can get that here too. Try some raw shrimp or a papaya salad with pieces of raw crab. The crab comes in-shell, and its texture is best described as “gooey.” Prices here are extremely fair and service is friendly, so, if you have few hours and a craving for fresh, perfectly cooked Thai, strongly consider Ayada.

One of the traditional takeout things about chicken stir fries is how they have chicken that looks like it was almost shaved, similar to Mongolian Beef in restaurants. The trick to this is to freeze the chicken for about one hour. Once you do you can very easily slice the chicken very thinly against the grain.
