I live in Ellensburg but have been there several times. A friend lives in Cle Elum. I love the food but the service is not always the greatest. I think she hires people without much experience in food service. Sometimes the service is good, other times not so great. I owned a restaurant years ago. There are times when I wanted to get up and just help with serving the tables. I don't think I have ever seen more than one person serving. Pad Thai is certainly among the most popular Thai dishes and it’s always been a favorite of mine. However, making this dish is actually a lot harder than it seems. As part of our new business venture, my husband and I have been making different versions of Pad Thai for the last few weeks. After much testing, tweaking, and of course eating, I think we came up with a pretty good take on this classic Thai stir-fry (he’s been to Thailand several times and agrees).

No, what the Larb King is doing is communicating Thai culture through ingredients more prevalent Stateside (and in the case of necessary components like spice mixes for his famous larb, he’ll just go bring them from Thailand himself). For instance, a dish like kor moo yang might manifest itself as "pork toro," the marinated pork jowl grilled until the ends slightly curl into little caramelized bits, or a succulent grilled pork shoulder that’s been treated with turmeric overnight and grilled to melting-tender perfection. In terms of the menu itself, Night + Market’s Silver Lake location is nearly identical to the original, meaning the food is still among the best you’ll find in LA. In fact the only thing I’ve had that’s come close were the Australian eateries of legendary chef David Thompson, widely regarded as the world’s foremost non-Thai expert on Thai cuisine, whose Darley Street Thai and Sailor’s Thai in Sydney were both excellent. Take close note of the location: there appears to be at least three restaurants with the name Pa Ord Noodles, and not all of them are created equal. This particular location tucked away into the corner of a strip mall off Sunset has some of the best boat noodles in the business, and at incredibly reasonable prices.
