Traditional pad thai sauce includes fish sauce, vinegar, sugar and tamarind paste. Tamarind paste is not easily found at a regular grocery stores so I substituted rice vinegar. If you would like to use tamarind paste, substitute about 2 Tablespoons in place of the rice vinegar in this recipe. Shrimp, fish sauce, tamarind, eggs, rice noodles, tofu, and bean sprouts are all common in pad thai. We simplified our version. Since we rarely need (or can find) tamarind, we skipped it in the sauce. To make up for it's sourness, we added lime juice. I made this recipe tonight. It had a great taste. I added 1/8 cup of peanut butter for a slightly more peanut buttery taste. Overall, this was spot on regarding taste. It had a great taste, but a few tips for others that may not be as avid chefs (like me). I am not necessarily the best cook, so this reminder is worth it. DO NOT OVERCOOK! The rice noodles are easy to become mush (I have not cooked with them before and the ones I had really should only have been cooked 1 minute and sat 3 for a firmer noodle – they ended up as mush for me because I waited 5 1/2 minutes). I added snow peas and baby corn, but I overcooked those too (yikes – I am such a rookie) because I wanted to cook the sauce items and had already added all the ingredients when I started adding the sauce ingredients. I feel like the sauce items should be mixed together first and heated before adding the noodles, shrimp and tofu, so it cooks properly / blends/heats, but maybe that is just because I wasn’t using a real wok (I don’t have one, so I used a large sauté pan. Everyone likes their Thai a little different (and it’s cool to hate on the champ). They got a remodel a few years back, but the food here is still the same. Crying Tiger is a tiny take-out window a few feet off of Hollywood Blvd. and, at first glance, seems like another decent drunk food option for everyone stumbling out of the bars. But Crying Tiger is much, much more. First off, it’s operated by the Luv2Eat people, so expect flavors and spice to be intense. Secondly, their menu goes far beyond a solid bowl of pad thai. Think spinach-based jade noodles, shu mai dumplings, and crispy chicken skin. Kitchen 79, on the border of Jackson Heights and Elmhurst and decorated a bit like a tidy, high-end nightclub (lots of black-and-white leather and glitzy light fixtures), is an excellent place to retrain your palate by familiarizing yourself with classics like gaeng tai pla — a deeply fishy, insanely fiery (not for everyone, but catnip for some) mackerel-based curry bobbing with curls of shrimp, tender cubes of pumpkin, and half-globes of barely crunchy Thai eggplant. Thailand is composed of four regions with very distinct cultures, dialects, and, of course, food. Nam prik noom is famous in Northern Thailand, where fresh veggies and young chilis are plentiful. One of the traditional takeout things about chicken stir fries is how they have chicken that looks like it was almost shaved, similar to Mongolian Beef in restaurants. The trick to this is to freeze the chicken for about one hour. Once you do you can very easily slice the chicken very thinly against the grain. Located up in the outer fringes of North Hollywood, Sri Siam has been around for over 30 years and is Thai royalty when it comes to its influence over this city. The crispy rice salad that blew your mind over at Night + Market? Sri Siam’s been doing it since the ’80s. Also, don’t be surprised if your server (i.e. the owner) pulls up a chair next to you and starts chatting - that’s just how things are done here. Best thing here? The off-the-menu radish cakes. I made this recipe sans the lentils portion (we wanted to use up other veggies in the fridge) and thought it was very tasty! I followed the meatball portion of the recipe to a T, but I left the mixture in the fridge for a full 2 days because I didn't have time to cook up the meatballs. My husband said these are the best turkey meatballs he has ever eaten. We weren't blown away by the yogurt sauce...after trying it, we added some sauteed garlic and shallots for some additional flavor. Overall, a solid recipe and I'd recommend giving it a try.

Disappointed for the quality of the food. Spent $50 for 3 people and the portion is very little. I would not recommend anyone to go over here if you are looking for good Thai food. My wife's food was mostly filled with onions than the actual food. My Pad Thai was extremely greasy. I've never seen a Pad Thai drenched with oil. Unsure what to call it. Didn't taste any of the Pad Thai flavor. You can tell a good Thai Food if they can cook Pad Thai. This place can't cook it. Two thumbs down
We dropped in for lunch and it was a delicious surprise with excellent food. The Tom Yom soup is delicious. The spice was perfect for level 2. Their pad Thai was excellent. The chicken satay was well done and I could taste that the peanut sauce is homemade. They have a unique dish Malay vegetable. You may not find it in other Thai places. Loved the taste. They seemed busy with crowd so the wait was little longer than expected. But for a small mom and pop shop, that is understandable with a big party there. Enjoy your food there. If you’re looking for fully authentic Thai on the Upper West Side, we need to have a talk about your expectations. The Upper West Side is where you take your niece to the planetarium or where you go to a Purim party dressed as John McEnroe. Now that we’ve cleared that up, feel free to enjoy something from the wok at Land Thai. This isn’t in-your-face Woodside food, but they do have sticky rice, and the curries are excellent. The same owners run Pure Thai Cookhouse, but the seating at Land Thai is more comfortable. Also, they do a two-course lunch for nine dollars.

And while there are lots of great restaurants in London, most have direct equivalents in New York and other major cities, while Nahm is so unique compared to anything here in the States that I consider it a must anytime I head across the pond. As I’ve mentioned a few times, I’ve been really taking it easy lately in the kitchen. When I say take it easy, I don’t mean making ten minute basil artichoke toasts and five minute magic green sauce. I mean taking it easy as in NOT COOKING ANYTHING. We’re talking life-saving dinner made by friends, hot dogs (gulp), mac and cheese, and chicken nuggets out of the freezer. If you’re passing through Midtown and you’re craving some larb, swerve to the east fifties and every other storefront will be a Thai restaurant. It can get a little overwhelming, but Wondee Siam is always a good choice. Because it’s a skyway spot it’s only open from 10 a.m.–3 p.m. weekdays, and because it’s a skyway spot they have a so-so lunch buffet that you should skip. Nahm was the first Thai eatery ever awarded a Michelin Star, a prestigious honor which it held for nearly a decade before losing last year. I’m not sure why, since I ate at Nahm again two months ago and it was as good and well run as ever, but Michelin can be quite fickle. Not that it matters - you should not go to Nahm for this increasingly unimportant distinction, but rather because it is both excellent and truly unique.

Pardon the pun, but tourists go nuts for this stir fried dish. Perhaps it's the wildly contrasting textures of a dish that saut's chicken alongside roasted cashews, sweet soy sauce, onions, chilies, pepper, carrot and mushrooms. Perhaps it's the sweetening dash of honey that appeals. Do you really care? The important thing is that this dish works: it's simple but scrumptious, a little bit tame and yet still totally Thai.

Rosa's is a popular mini chain of 13 Thai restaurants across London and I visited the brightly decorated Soho location. Chef Saiphin prides herself on creating authentic Thai dishes reminiscent of the cooking on her family farm back in Khao Kho. While the much loved green curry is perfectly cooked and a firm bestseller here, our favorite was the beef massaman curry packed with potatoes, cashew nuts and fragrant spices. A close second dish was "drunken" flat noodles (guay tiew pad kee mao) stir fried with basil, peppercorn and galangal. And I never tire of the famous stir fried noodle dish, Pad Thai, an excellent version of which is on offer at Rosa’s.

Add another tablespoon of oil to the pan. Drain the noodles – they should be softened by now. Add the noodles to the hot pan and stir fry for a minute, using tongs to toss. Add the sauce and stir fry for another minute or two, until the sauce is starting to thicken and stick to the noodles. Push the noodles aside to make a little room for the egg – pour the beaten egg into the pan and let it sit for 30 seconds or so. Toss everything around with the tongs. The egg mixture will stick to the noodles and everything will start getting sticky.

Greetings from LA’s best (and most important) Thai restaurant you’ve never heard of before. Located up in the outer fringes of North Hollywood, Sri Siam has been around for over 30 years and is Thai royalty when it comes to its influence over this city. Having a great bowl of khao soi is a life changing experience. The best khao soi I’ve ever had was in Northern Thailand where the dish is considered a regional specialty. What makes this noodle soup so special is the balance of creamy coconut broth with sharp, pickled mustard greens, raw shallots, and crispy egg noodles. Squeeze fresh lime over the entire thing and you have a comforting bowl of different textures and flavors -- what Thai food is all about.
When the noodles are in good shape, toss in 1/2 of the bean sprouts and peanuts; save the remaining for garnish. Continue to stir-fry, to combine. Return the shrimp to the wok and toss the pad thai together to warm everything through. Serve the pad thai on a platter, pile the remaining bean sprouts and peanuts on 1 side of the dish and garnish with the lime wedges and cilantro. Squeeze lime juice over each portion before eating. Thanks largely to the opening of Sripraphai (more on that below) some 20 years ago, Queens (and particularly the bordering Woodside and Elmhurst neighborhoods) has become the borough most associated with wonderful Thai restaurants, and in the current landscape Ayada takes the cake. The lengthy menu is full of absolute hits from all over the country: succulent frog’s legs, fried golden and draped in holy basil; salty minced pork, hiding rich quarters of black (preserved) eggs; a tantalizing tamarind-infused sour curry, bobbing with shrimp and fluffy cubes of omelette. One visit would be just scratching the surface of what’s on offer; returning many times could yield such a diversity of recipes and flavors that you might feel like you’d visited a different restaurant each time, were it not for the consistency of both the cooking and the atmosphere. The small dining room is polished and elegant without feeling too formal, the service exceptionally attentive and extremely pleasant. A meal at Ayada is an all-around slam dunk. Ann Redding and Matt Danzer, the married chefs behind Uncle Boons, seem to have a goal similar to Andy Ricker’s: to transform the way the average American (or at least New York) diner thinks about Thai food, as not just an interesting, exotic “ethnic” option but in fact one of the great cuisines of the world, on par with French or Italian. Their restaurant is as buzzy and stylish as any other in Nolita, and though they hew carefully to tradition when it comes to each dish, they follow their whims in terms of the wide array of them, inspired by their travels all across the country, and place a premium on using the highest quality ingredients. When betel leaves are available, it’d be nothing short of a mistake to skip them, wrapped around a heady mixture of fresh ginger, coconut, dried shrimp, and shrimp paste, plus peanuts and chiles. And you’d be hard-pressed to find a better khao soy, the northern-style, coconut-based, whole-chicken-leg curry, made golden with fresh turmeric and featuring homemade egg noodles.
