When May Chaleoy came to America in 1997, she planned to learn English and then return to her native Bangkok. What do they taste like? Shirataki noodles are actually taste-less and will take on the flavors of the dish. Texture-wise is where they vary, as they are more rubbery than your traditional noodles. And tbh, we’re not fans of using them outside the realms of Asian cuisine. But given that the rice noodles used in pad Thai are also on the chewy-side, shirataki noodles do work quite well here. And in our book, definitely worth a try.

Lately, we’ve been telling a lot of people to get Uncle Boons in their rotation. It’s in a little space on Spring Street, and it’s the rare spot that exceeds the expectations of its trendy hype. Lovely Day isn’t the most authentic Thai, but at least they aren’t pretending to be. Sure, there’s a seared tuna sushi roll on the menu, but this is always a charming spot for a casual meal with friends. Hi! I just tried this but made a couple tweaks, just because I didn’t have all the ingredients. I was looking for a good base recipe and this is it! Thanks! 🙂 (My tweaks were really just using a bit of peanut butter to make the sauce creamy and have more body–since I didn’t have fish sauce, using spinach instead of zucchini, omitting the egg, and using sriracha! Oh, and squeezing a little lime juice into the sauce, too!)
