Lan Larb is a no frills Thai spot on a random no-man’s-land block below Nolita that stands out because it’s so normal. Every other restaurant in the area spent half their original budget on custom matchbooks and artisanal neon signs, but Lan Larb is fine doing its own thing. If you’re looking for delivery, they’ll bring some very good curry or noodles to your office or home. The restaurant isn’t good for any kind of occasion that calls for ambiance, but, if you just need good food, stop in and try some of their Isan regional specialties, like larb (ground meat salad) or Thai sausage.

When noodles are soft enough (but still slightly harder than al dente pasta), rinse them in cold water and drain. Make sure all of your ingredients are set up and divided into equal portions. Note: You’re cooking one portion at a time. Add 2 tbsp. oil to a wok or large non-stick pan. Heat on medium-high, until very hot. Add chicken (if using) and cook for 1 min, then add tofu and garlic. Cook for about 45 secs, stirring frequently. Garlic should now be brown. Stir in noodles, then add 3 tbsp. of sauce mixture. Coat noodles and meat well and stir vigorously to keep noodles from sticking. After about 2 mins, taste noodles to check if they’re soft enough. Traditional pad thai sauce includes fish sauce, vinegar, sugar and tamarind paste. Tamarind paste is not easily found at a regular grocery stores so I substituted rice vinegar. If you would like to use tamarind paste, substitute about 2 Tablespoons in place of the rice vinegar in this recipe. I also added a big scoop of peanut butter to my sauce, because I think it gives the whole dish an added creaminess and boost of flavor that I love. SriPraPhai holds it down in Woodside as the resident OG Thai food destination. Haters will tell you there are better authentic Thai places, and, in a way, they’re probably right. Everyone likes their Thai a little different (and it’s cool to hate on the champ). They got a remodel a few years back, but the food here is still the same. Get a curry, and get some soft-shelled crab, and don’t miss the watercress salad. If sweet sausage salad sounds good to you, congratulations: you’re a normal person. Get it. Ask for your dishes “Thai spicy” then open your mouth and hang your head out the window of the 7 train on the way back to the city. That’ll help.
This new, slightly upscale seafood-centric Noho spot from a pair of Thai-born brothers (who worked at one of Bangkok’s most renowned restaurants and for Tom Colicchio, respectively) may join the ranks of Uncle Boons and Pok Pok. The food at Nahm is unlike any you are likely to find elsewhere, and certainly not outside of Thailand. Considering that more Americans visit London than any other city outside North America, this presents a truly unique opportunity to have a meal dramatically different from all others. On my recent visit I took a friend who is a Japanese financial executive who has been living in London for two years but had never been to Nahm, and he was blown away, saying he would soon return with his family. Like Ayada, Chao Thai has settled comfortably, but not passively, into its role as a standard-setter for Elmhurst’s Thai scene. The owners opened a larger second location nearby, but it closed after a few years, reportedly because the chef went back to Thailand. It’s a decade into its run, but there’s still no liquor license — not such a bad thing when you can BYOB your favorite beer — and the dining room is still a tight wedge of a space. But who cares when the service is so warm (if still a bit hesitant about serving spicy or funky dishes to outsiders) and the food is this good? Ayada is where you go when you’re in the mood for curries; Chao Thai is the spot for Thai-style salads. The papaya salad is bright, refreshing, and not too hot; a lemongrass salad packed with chopped chiles, limes, and nuts is punchy and invigorating. Whatever you do, don’t sleep on the yam pla-duk fu, a salad of firm-fleshed young mango (or sometimes green papaya) with a lime dressing and ground catfish that’s been deep-fried into crunchy, wispy bits of fish. It’s one of Queens’ most thrilling dishes. Chao does have range beyond Thai-style salads. To begin, there’s crispy pork belly with Chinese broccoli and oyster sauce, and khao kha moo, that famous Bangkok street dish of stewed pork leg over rice. Here, the gravy is lip-smackingly thick, the tender meat best dipped in the nam pla prik that comes with it, and the rice fluffy.

Even papaya salad gets the fine-dining treatment at Uncle Boons, no surprise when you consider the restaurant’s husband-and-wife team (Matt Danzer and Ubon-born Ann Redding) hail from Per Se. Armed with a charcoal grill and rotisserie (no small feat in Manhattan), Danzer and Redding turn out smoky seafood plates with nam prik (Thai chile sauce). The crowd at this art-cluttered tavern is as varied as the menu, which is admittedly regionally unfocused, though it consists mostly of Redding’s family recipes. So it’s not uncommon for traditional massaman curry punctuated with green peppercorns (a drier version than you’re likely used to) and titillating lamb larb to simultaneously hit the table with unconventional mee krob with fried sweetbreads. Since opening a couple of years back, Paet Rio has steadily improved and become one of the more reliable restaurants in this exceedingly crowded scene. Like Khao Kang and chicken specialist Eim Khao Mun Kai, a neighborhood favorite, its design is modern and heavy on wood. With its leather cushions, brick walls, and Edison lightbulbs, it looks the part of the hip restaurant slinging, say, confit kao soy chicken and pad Thai fritters. But it’s nothing of the sort. There’s a lot on offer, so home in on the robust selection of noodles and noodle soups: khanom chin nam-ngiao, fermented rice noodles in a thick, gravylike tomato-and-pork sauce; rich kao soy, served with crispy noodles thicker than standard and a well-cooked drumstick; and sukiyaki, a Bangkok mom-and-pop dish offered both as a soup and dry dish. As for the latter, it comes with pork and is seared to almost smokiness, tangled greens, crunchy stems, and an irresistible, tomato-y sauce that’s equal parts sweet and savory. Ignore the larb, which underdelivers, and begin every meal with a combo of dried pork “floss” and excellently made, well-fried curry puffs. Here, the pan–Southeast Asian snack’s puff-pastry wrapper is buttery, the spicy potato-and-chicken filling soft like a purée, and the clear dipping sauce sweet and cucumber-y. Hailing from the Northeast state of Isaan, this outlandish dish is both great divider - some can't get enough of its bite, some can't handle it - and greatly distinctive. Garlic, chilies, green beans, cherry tomatoes and shredded raw papaya get dramatically pulverized in a pestle and mortar, so releasing a rounded sweet-sour-spicy flavour that's not easily forgotten. What do they taste like? Shirataki noodles are actually taste-less and will take on the flavors of the dish. Texture-wise is where they vary, as they are more rubbery than your traditional noodles. And tbh, we’re not fans of using them outside the realms of Asian cuisine. But given that the rice noodles used in pad Thai are also on the chewy-side, shirataki noodles do work quite well here. And in our book, definitely worth a try.

The indigenous Thai street food Kris Yenbamroong is cooking up at both the new Silver Lake outpost and the original West Hollywood NIGHT + MARKET is everything we’ve come to love about north and northeastern Thai food—pungent, bold flavors and gobs of heat smacking you in the face. The best approach: bring friends and share lots of small plates. Start with luu suk, a “dipping soup” of pork blood and MSG topped with fresh herbs and pork cracklings, and spicy catfish larb before digging into the pork toro (75 percent of which is fat) and curries, alongside generous helpings of sticky rice. To tame the fire, order a bottle of pét-nat, a natural sparkling wine. Close your eyes and taste—you could easily be in Chiang Rai.
